Italian Chicken Sandwiches
Spinach-Mushroom Salad
Ingredients
- 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
- 1 Tbsp olive oil
- 1 Tbsp Italian seasoning
- 2 tomatoes, thinly sliced
- 6 (0.67-oz) slices reduced-fat provolone cheese
- ¾ cup roasted garlic pasta sauce (or use your favorite), heated
- 6 hamburger buns, split and toasted (preferably whole wheat)
- 1 (1-oz) pkg fresh basil, separated into leaves
Instructions
- Preheat grill or grill pan to medium-high heat. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Brush chicken with oil, and sprinkle with Italian seasoning.
- Grill chicken, covered, 4 to 5 minutes per side or until done. Slice chicken, if desired.
- Spread pasta sauce on bottom halves of buns. Top with chicken, tomatoes, and cheese. Cover and let stand 1 minute or until cheese is melted. Top with basil and top halves of buns.
Side Dish Ingredients
- 1 (11-oz) pkg baby spinach
- ½ cup sliced red onion
- 1 (8-oz) pkg sliced cremini mushrooms
- ⅓ cup refrigerated balsamic vinaigrette
Side Dish Instructions
- Toss together all ingredients in a serving bowl.
