Pesto Couscous Bowls

Ingredients

  • 2 cups whole wheat Israeli (pearl) couscous
  • 1 (6-oz) jar pesto
  • 1 (8-oz) pkg fresh mozzarella cheese pearls
  • 1 pint grape tomatoes, halved
  • ½ cup chopped fresh basil
  • 3 Tbsp balsamic glaze 

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool. Stir together couscous and pesto in a serving bowl.
  2. Add cheese, tomatoes, and basil; toss. Serve drizzled with balsamic glaze.
