Fresh Corn and Basil Pizza

Ingredients

  • 1 (1-lb) ball bakery pizza dough
  • 3 ears corn
  • 6 cloves garlic, minced
  • ¼ tsp crushed red pepper (optional)
  • ½ cup olive oil
  • 1 (8-oz) ball fresh mozzarella cheese, sliced
  • ½ cup fresh basil leaves

Instructions

  1. Preheat oven to 400°F. Roll out dough to a 16-inch round on a large greased baking sheet. Prick surface of dough several times with a fork; bake 6 minutes.
  2. Meanwhile, cut kernels from cobs; discard cobs. Cook corn in a large skillet over medium-high heat 7 minutes or until browned. Remove from heat.
  3. Cook garlic and, if desired, red pepper in hot oil in another skillet over medium heat, stirring often, until garlic is lightly browned and fragrant. Remove from heat.
  4. Brush garlic oil over partially baked crust. Top with cheese and corn. Bake 8 minutes or until crust is browned and cheese is melted. Sprinkle with basil.
