Basil Roll Bowl
Citrus MangoIngredients
- ½ (8-oz) pkg thin brown rice noodles
- 1 small head Bibb lettuce, torn
- 1 cup tricolor coleslaw
- ½ (0.5-oz) pkg fresh basil, thinly sliced
- 1 cup sliced English cucumber
- ½ (8-oz) pkg sesame ginger baked tofu, cubed
- 1 avocado, sliced
- ¼ cup vegan Thai peanut sauce
Instructions
- Prepare noodles according to package directions; rinse under cold water, and drain.
- Toss together lettuce, coleslaw, basil, and tofu in a large bowl.
- Divide noodles between 2 dishes; top with salad and avocado, and drizzle with peanut sauce.

- 1 mango, cubed
- ½ tsp lime zest
- 1 tsp lime juice
Side Dish Instructions
- Gently toss all ingredients together in a large bowl.
