Ingredients

  • ½ (8-oz) pkg thin brown rice noodles
  • 1 small head Bibb lettuce, torn
  • 1 cup tricolor coleslaw
  • ½ (0.5-oz) pkg fresh basil, thinly sliced
  • 1 cup sliced English cucumber
  • ½ (8-oz) pkg sesame ginger baked tofu, cubed
  • 1 avocado, sliced
  • ¼ cup vegan Thai peanut sauce

Instructions

  1. Prepare noodles according to package directions; rinse under cold water, and drain.
  2. Toss together lettuce, coleslaw, basil, and tofu in a large bowl.
  3. Divide noodles between 2 dishes; top with salad and avocado, and drizzle with peanut sauce.

  • 1 mango, cubed
  • ½ tsp lime zest
  • 1 tsp lime juice

Side Dish Instructions

  1. Gently toss all ingredients together in a large bowl.
