Cheesy Vegetable Orzo

Ingredients

  • 1½ cups frozen stir-fry vegetables
  • 1 clove garlic, minced
  • 2 tsp olive oil
  • 1 Tbsp all-purpose flour
  • 1 cup 2% reduced-fat milk
  • 1 cup low-sodium vegetable broth
  • ¾ cup orzo
  • 1 cup shredded mozzarella cheese
  • ¼ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Cook vegetables and garlic in hot oil in a Dutch oven over medium-high heat 8 minutes or until lightly browned. Add flour, stirring until blended. Cook 1 minute, stirring constantly.
  2. Add milk, broth, and orzo; bring to a simmer. Reduce heat to medium, and cook 7 minutes, stirring occasionally, until orzo is almost tender.
  3. Stir in cheese, salt, and pepper; cook 2 to 3 minutes or until thickened.
