Cheesy Vegetable Orzo
Ingredients
- 1½ cups frozen stir-fry vegetables
- 1 clove garlic, minced
- 2 tsp olive oil
- 1 Tbsp all-purpose flour
- 1 cup 2% reduced-fat milk
- 1 cup low-sodium vegetable broth
- ¾ cup orzo
- 1 cup shredded mozzarella cheese
- ¼ tsp salt
- ⅛ tsp pepper
Instructions
- Cook vegetables and garlic in hot oil in a Dutch oven over medium-high heat 8 minutes or until lightly browned. Add flour, stirring until blended. Cook 1 minute, stirring constantly.
- Add milk, broth, and orzo; bring to a simmer. Reduce heat to medium, and cook 7 minutes, stirring occasionally, until orzo is almost tender.
- Stir in cheese, salt, and pepper; cook 2 to 3 minutes or until thickened.
