Roasted Cauliflower-Lemon Pappardelle

Ingredients
- 1 lemon
- 2 cups cauliflower florets
- 1 Tbsp olive oil
- ¼ tsp salt, divided
- 2 cloves garlic
- 1 (8.8-oz) pkg pappardelle pasta
- 1 Tbsp butter, softened
- ½ cup freshly grated Parmesan cheese
- 3 Tbsp chopped fresh parsley
- ¼ tsp pepper (see Note)
Instructions
- Preheat oven to 450°F. Grate zest and squeeze juice from lemon.
- Toss together cauliflower, oil, ⅛ tsp salt, and garlic on a rimmed baking sheet. Spread in a single layer.
- Roast 15 to 20 minutes or until lightly browned, stirring once. Mince roasted garlic.
- Meanwhile, cook pasta according to package directions. Toss together pasta, cauliflower, garlic, lemon zest, lemon juice, butter, cheese, parsley, pepper, and ⅛ tsp salt.
