Roasted Cauliflower-Lemon Pappardelle

Ingredients

  • 1 lemon
  • 2 cups cauliflower florets
  • 1 Tbsp olive oil
  • ¼ tsp salt, divided
  • 2 cloves garlic
  • 1 (8.8-oz) pkg pappardelle pasta
  • 1 Tbsp butter, softened
  • ½ cup freshly grated Parmesan cheese
  • 3 Tbsp chopped fresh parsley
  • ¼ tsp pepper (see Note)

Instructions

  1. Preheat oven to 450°F. Grate zest and squeeze juice from lemon.
  2. Toss together cauliflower, oil, ⅛ tsp salt, and garlic on a rimmed baking sheet. Spread in a single layer.
  3. Roast 15 to 20 minutes or until lightly browned, stirring once. Mince roasted garlic.
  4. Meanwhile, cook pasta according to package directions. Toss together pasta, cauliflower, garlic, lemon zest, lemon juice, butter, cheese, parsley, pepper, and ⅛ tsp salt.
