Fried Eggs over Chicken-Kale Sauté

Ingredients

  • 3 Tbsp olive oil
  • 8 large eggs
  • 1 lb ground chicken (or use ground turkey)
  • 1 cup chopped onion
  • 1 (5-oz) pkg baby kale
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Heat 1 Tbsp oil in a large nonstick skillet over medium heat. Crack 4 eggs into skillet.
  2. Cover and cook 3 minutes or until whites are set and yolks are to desired degree of doneness; season to taste with salt and pepper.
  3. Repeat procedure with 1 Tbsp oil and remaining eggs. Keep warm.
  4. Return skillet to medium-high heat. Cook chicken and onion in 1 Tbsp hot oil 6 minutes or until chicken is done and onion is tender.
  5. Add kale, salt, and pepper; cook 1 to 2 minutes or until kale is wilted. Divide chicken mixture among 4 plates; top with eggs.
