Ingredients
- 1 large egg
- ¼ cup gluten-free all-purpose flour
- 1 lb boneless pork loin chops
- 2 Tbsp olive oil
- ½ lemon, cut into wedges
Instructions
- Whisk egg in a shallow bowl. Place flour in another shallow bowl. Dip pork in egg; dredge in flour, shaking off excess.
- Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until golden brown. Season lightly with salt and pepper. Serve with lemon wedges.

- 1½ Tbsp olive oil
- 1 Tbsp apple cider vinegar
- ½ Tbsp honey
- ½ (16-oz) pkg tricolor coleslaw
- 1 red apple (such as Gala, Fuji, or Honeycrisp), thinly sliced

- Whisk together oil, vinegar, and honey in a bowl. Add coleslaw and apple; toss.
