Crunchy Apple Slaw

Ingredients

  • 1 large egg
  • ¼ cup gluten-free all-purpose flour
  • 1 lb boneless pork loin chops
  • 2 Tbsp olive oil
  • ½ lemon, cut into wedges

Instructions

  1. Whisk egg in a shallow bowl. Place flour in another shallow bowl. Dip pork in egg; dredge in flour, shaking off excess.
  2. Cook pork in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until golden brown. Season lightly with salt and pepper. Serve with lemon wedges.

Side Dish Ingredients

  • 1½ Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • ½ Tbsp honey
  • ½ (16-oz) pkg tricolor coleslaw
  • 1 red apple (such as Gala, Fuji, or Honeycrisp), thinly sliced

Side Dish Instructions

  1. Whisk together oil, vinegar, and honey in a bowl. Add coleslaw and apple; toss.
