Ginger-Soy Steak Skewers

Ingredients

  • ½ cup olive oil
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • 3 Tbsp refrigerated ginger paste (or use ¾ tsp ground ginger)
  • 2 Tbsp lime juice
  • ½ tsp crushed red pepper
  • 1½ Tbsp minced garlic
  • 2 lb skirt steak, cut into thin strips
  • 2 Tbsp toasted sesame seeds

Instructions

  1. Whisk together oil, soy sauce, vinegar, ginger paste, lime juice, red pepper, and garlic in a large zip-top plastic bag; add beef. Let stand 10 minutes while grill preheats.
  2. Preheat grill or grill pan to medium-high heat. Remove beef from marinade; discard marinade. Thread beef onto metal or bamboo skewers. Season with salt and pepper.
  3. Grill, covered, 4 minutes per side or to desired doneness. Sprinkle with sesame seeds. Serve half of steak skewers. Reserve remaining steak in refrigerator for lunch the next day.

Side Dish Ingredients

  • 2 Tbsp dark sesame oil
  • 1½ Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 2 heads baby bok choy, halved

Side Dish Instructions

  1. Whisk together oil, soy sauce, and vinegar in a bowl. Add bok choy, and toss. Cook in a nonstick skillet over medium-high heat until tender. Season with salt and pepper to taste.
