Ingredients
- ½ (16-oz) pkg penne pasta
- ½ (12-oz) bottle French vinaigrette
- 1 (6-oz) pkg portobello mushrooms, cleaned
- 1 red bell pepper, halved
- 1 ear corn, shucked
- 2 zucchini, cut into ¼-inch-thick planks
- ½ red onion, cut into ½-inch-thick slices
- ¼ cup chopped fresh basil
- ¾ cup freshly grated Parmesan cheese
Instructions
- Cook pasta according to package directions. Meanwhile, preheat grill or grill pan to medium-high heat. Toss ¼ cup vinaigrette with mushrooms, bell pepper, corn, zucchini, and onion in a bowl. Season with salt and pepper.
- Grill vegetables, covered, 5 to 10 minutes or until browned and tender. Cut kernels from cob, discarding cob. Coarsely chop mushrooms, bell pepper, zucchini, and onion.
- Toss together pasta, vegetables, ¼ cup vinaigrette, basil, and salt and pepper to taste in a bowl. Sprinkle with cheese.
