Sweet and Sour Chicken

Ingredients
- 1 onion, sliced
- 1 red bell pepper, sliced
- 3½ lb boneless, skinless chicken breasts
- 1 (20-oz) can pineapple chunks in juice, drained
- 1 (12-oz) bottle sweet and sour sauce
- ½ cup low-sodium chicken broth
Instructions
- Place onion and bell pepper in a greased 5- to 6-quart slow cooker; top with chicken and pineapple.
- Combine sweet and sour sauce and broth in a bowl; pour into cooker.
- Cover and cook on LOW 5 to 6 hours or until chicken is done. Remove chicken, and chop (reserve 3 cups chopped chicken for Party Chicken Salad recipe). Return remaining chicken to slow cooker.
- Serve chicken mixture over Jasmine Rice recipe.
Side Dish Ingredients
- 3 (3.5-oz) pouches boil-in-bag jasmine rice
- 1 (20-oz) pkg frozen broccoli stir fry
- 3 Tbsp sesame oil (or use olive oil)
- 3 Tbsp low-sodium soy sauce
Side Dish Instructions
- Prepare rice according to package directions.
- Steam vegetables according to package directions; stir in oil and soy sauce.
