Sweet and Sour Chicken

Ingredients

  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 3½ lb boneless, skinless chicken breasts
  • 1 (20-oz) can pineapple chunks in juice, drained
  • 1 (12-oz) bottle sweet and sour sauce
  • ½ cup low-sodium chicken broth

Instructions

  1. Place onion and bell pepper in a greased 5- to 6-quart slow cooker; top with chicken and pineapple.
  2. Combine sweet and sour sauce and broth in a bowl; pour into cooker.
  3. Cover and cook on LOW 5 to 6 hours or until chicken is done. Remove chicken, and chop (reserve 3 cups chopped chicken for Party Chicken Salad recipe). Return remaining chicken to slow cooker.
  4. Serve chicken mixture over Jasmine Rice recipe.

Side Dish Ingredients

  • 3 (3.5-oz) pouches boil-in-bag jasmine rice
  • 1 (20-oz) pkg frozen broccoli stir fry
  • 3 Tbsp sesame oil (or use olive oil)
  • 3 Tbsp low-sodium soy sauce

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Steam vegetables according to package directions; stir in oil and soy sauce.
