Party Chicken Salad
Marinated Carrots and Homemade Pita ChipsIngredients
- ¾ cup mayonnaise
- ½ cup diced celery
- 2 Tbsp Dijon mustard
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- 3 green onions, sliced
- 3 cups reserved chopped chicken (from Sweet and Sour Chicken recipe)
- 2 cups seedless red grapes, halved
- 1 head red or green leaf lettuce
Instructions
- Stir together first 7 ingredients in a large bowl. Add chicken and grapes; toss gently to combine.
- Place lettuce leaves on 6 plates; top with chicken salad.
Side Dish Ingredients
- 6 pita bread rounds
- 3 Tbsp olive oil, divided
- 1 tsp Greek seasoning
- 4 carrots, cut into sticks
- 1 Tbsp lemon juice
Side Dish Instructions
- Preheat oven to 400°. Cut each pita round into 6 triangles, and place on a large baking sheet. Brush with 2 Tbsp oil; sprinkle with Greek seasoning. Bake 5 to 7 minutes or until crisp.
- Toss together carrots, 1 Tbsp oil, and lemon juice; let stand 10 minutes.
