Party Chicken Salad

Marinated Carrots and Homemade Pita Chips

Ingredients

  • ¾ cup mayonnaise
  • ½ cup diced celery
  • 2 Tbsp Dijon mustard
  • 1 tsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 green onions, sliced
  • 3 cups reserved chopped chicken (from Sweet and Sour Chicken recipe)
  • 2 cups seedless red grapes, halved
  • 1 head red or green leaf lettuce

Instructions

  1. Stir together first 7 ingredients in a large bowl. Add chicken and grapes; toss gently to combine.
  2. Place lettuce leaves on 6 plates; top with chicken salad.

Side Dish Ingredients

  • 6 pita bread rounds
  • 3 Tbsp olive oil, divided
  • 1 tsp Greek seasoning
  • 4 carrots, cut into sticks
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Preheat oven to 400°. Cut each pita round into 6 triangles, and place on a large baking sheet. Brush with 2 Tbsp oil; sprinkle with Greek seasoning. Bake 5 to 7 minutes or until crisp.
  2. Toss together carrots, 1 Tbsp oil, and lemon juice; let stand 10 minutes.
