Pork with Hull Peas

Ingredients

  • 1 sweet onion, thinly sliced
  • ½ cup all-purpose flour
  • 1 tsp garlic powder
  • ¾ tsp salt
  • ¾ tsp pepper
  • 1½ lb boneless pork loin, cubed
  • 2 Tbsp olive oil
  • 2 (12-oz) pkg frozen purple hull peas 
  • 1 cup low-sodium chicken broth

Instructions

  1. Place onion in a 5- to 6-quart slow cooker.
  2. Combine flour, garlic powder, salt, and pepper in a shallow dish; toss pork in flour mixture.
  3. Sauté pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned on all sides.
  4. Add pork to slow cooker; top with peas. Pour in broth. Cover and cook on LOW 6 to 7 hours or until pork is done.

  • 1 (20-oz) pkg frozen sweet potato fries

Side Dish Instructions

  1. Bake sweet potato fries according to package directions.
