Chicken Thighs in Blackberry Sauce

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1 pint fresh blackberries
  • ¼ cup low-sodium chicken broth
  • ¼ cup honey
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced

Instructions

  1. Place chicken in a 5- to 6-quart slow cooker.
  2. Stir together blackberries, broth, honey, vinegar, and salt; pour over chicken. Top with onion and garlic.
  3. Cover and cook on LOW 7 to 8 hours or until chicken is tender.

Side Dish Ingredients

  • 1 (10-oz) pkg saffron rice
  • 1 (11-oz) can sweet whole kernel corn, drained
  • ¼ cup sliced green onions
  • 2 plum tomatoes, chopped
  • 2 avocados, chopped
  • 2 Tbsp lemon juice
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Prepare rice according to package directions.
  2. Stir in corn, green onions, and tomatoes.
  3. Toss avocado with lemon juice. Sprinkle avocado and cilantro over rice.
