Chicken Thighs in Blackberry Sauce
Yellow Rice with Avocado, Corn, and Tomatoes
Ingredients
- 2 lb boneless, skinless chicken thighs
- 1 pint fresh blackberries
- ¼ cup low-sodium chicken broth
- ¼ cup honey
- 2 Tbsp balsamic vinegar
- ½ tsp salt
- 1 onion, thinly sliced
- 2 cloves garlic, minced
Instructions
- Place chicken in a 5- to 6-quart slow cooker.
- Stir together blackberries, broth, honey, vinegar, and salt; pour over chicken. Top with onion and garlic.
- Cover and cook on LOW 7 to 8 hours or until chicken is tender.
Side Dish Ingredients
- 1 (10-oz) pkg saffron rice
- 1 (11-oz) can sweet whole kernel corn, drained
- ¼ cup sliced green onions
- 2 plum tomatoes, chopped
- 2 avocados, chopped
- 2 Tbsp lemon juice
- ½ cup chopped fresh cilantro
Side Dish Instructions
- Prepare rice according to package directions.
- Stir in corn, green onions, and tomatoes.
- Toss avocado with lemon juice. Sprinkle avocado and cilantro over rice.
