Ingredients

  • 1 lime
  • 1 Tbsp olive oil
  • 2 tsp agave syrup (or use maple syrup)
  • ¼ tsp salt
  • ⅛ tsp pepper
  • ⅛ tsp garlic powder
  • ¾ lb boneless, skinless chicken thighs (or use boneless, skinless chicken breasts or pork chops)
  • 1 Tbsp finely chopped fresh cilantro

Instructions

  1. Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from lime. Combine lime zest, lime juice, oil, agave, salt, pepper, and garlic powder; brush half of mixture on chicken.
  2. Grill chicken, covered, 6 minutes per side or until done, brushing with remaining lime mixture during cooking. Sprinkle with cilantro.

Side Dish Ingredients

  • ¾ cup frozen whole kernel corn, thawed
  • ½ cup frozen seasoning blend (diced onion, bell peppers and celery)
  • 2 tsp olive oil
  • ¾ cup black beans, drained and rinsed
  • 1 Tbsp mayonnaise
  • 1 Tbsp lime juice
  • ½ tsp chili powder
  • ⅛ tsp pepper
  • ¼ cup crumbled cotija cheese (or use feta cheese)

Side Dish Instructions

  1. Cook corn and seasoning blend in hot oil in a cast-iron skillet over medium-high heat 8 minutes or until browned. Add beans; cook 5 minutes or until thoroughly heated.
  2. Stir in mayonnaise, lime juice, chili powder, and pepper. Sprinkle with cheese.
