Grilled Agave-Lime Chicken

Ingredients
- 1 lime
- 1 Tbsp olive oil
- 2 tsp agave syrup (or use maple syrup)
- ¼ tsp salt
- ⅛ tsp pepper
- ⅛ tsp garlic powder
- ¾ lb boneless, skinless chicken thighs (or use boneless, skinless chicken breasts or pork chops)
- 1 Tbsp finely chopped fresh cilantro
Instructions
- Preheat grill or grill pan to medium-high heat. Grate zest and squeeze juice from lime. Combine lime zest, lime juice, oil, agave, salt, pepper, and garlic powder; brush half of mixture on chicken.
- Grill chicken, covered, 6 minutes per side or until done, brushing with remaining lime mixture during cooking. Sprinkle with cilantro.
Side Dish Ingredients
- ¾ cup frozen whole kernel corn, thawed
- ½ cup frozen seasoning blend (diced onion, bell peppers and celery)
- 2 tsp olive oil
- ¾ cup black beans, drained and rinsed
- 1 Tbsp mayonnaise
- 1 Tbsp lime juice
- ½ tsp chili powder
- ⅛ tsp pepper
- ¼ cup crumbled cotija cheese (or use feta cheese)
Side Dish Instructions
- Cook corn and seasoning blend in hot oil in a cast-iron skillet over medium-high heat 8 minutes or until browned. Add beans; cook 5 minutes or until thoroughly heated.
- Stir in mayonnaise, lime juice, chili powder, and pepper. Sprinkle with cheese.
