Mozzarella Bruschetta Chicken

Ingredients
- ¾ lb boneless, skinless chicken breasts
- 2 tsp olive oil
- 2 oz fresh mozzarella cheese, cut into 2 slices
- ¼ cup bruschetta topping
- 2 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh basil (optional)
Instructions
- Preheat broiler. Cook chicken in hot oil in a cast-iron or overproof skillet 5 to 6 minutes per side or until done.
- Top with cheese; broil 2 minutes or until cheese melts. Top with bruschetta topping and vinegar. Sprinkle with basil, if desired.
Side Dish Ingredients
- 2 cups spring mix
- 1 peach, sliced
- ⅓ cup blueberries (or use raspberries or blackberries)
- 2 Tbsp olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a bowl.
