Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 2 tsp olive oil
  • 2 oz fresh mozzarella cheese, cut into 2 slices
  • ¼ cup bruschetta topping
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp chopped fresh basil (optional)

Instructions

  1. Preheat broiler. Cook chicken in hot oil in a cast-iron or overproof skillet 5 to 6 minutes per side or until done.
  2. Top with cheese; broil 2 minutes or until cheese melts. Top with bruschetta topping and vinegar. Sprinkle with basil, if desired.

  • 2 cups spring mix
  • 1 peach, sliced
  • ⅓ cup blueberries (or use raspberries or blackberries)
  • 2 Tbsp olive oil vinaigrette

  1. Toss together all ingredients in a bowl.
