Kung Pao Beef and Vegetables

Ingredients

  • ½ lb flank steak (or use skirt steak)
  • 1 red or yellow bell pepper, cut into 1-inch pieces
  • 1 (8-oz) pkg sliced mushrooms
  • ½ (8-oz) pkg snow peas
  • ⅓ cup kung pao sauce

Instructions

  1. Cook beef in a large skillet coated with cooking spray over medium-high heat 5 minutes per side or to desired doneness. Let rest 5 minutes before thinly slicing across the grain.
  2. Meanwhile, cook bell pepper, mushrooms, and snow peas in another large skillet over medium-high heat 8 minutes or until browned and tender.
  3. Add beef and sauce to skillet with vegetables; cook 2 minutes or until thoroughly heated, tossing to coat.
