Potato-Kielbasa Bowls
Ingredients
- 1 (20-oz) pkg refrigerated diced potatoes
- ½ (14-oz) pkg kielbasa sausage, sliced
- ½ onion, thinly sliced
- 1½ Tbsp olive oil, divided
- 1½ Tbsp water
- 1½ Tbsp apple cider vinegar
- 1 Tbsp Dijon mustard
- ½ tsp dried thyme
- 3 cups baby spinach
Instructions
- Preheat oven to 450°F. Spread potatoes in a single layer on a rimmed baking sheet. Bake 20 minutes or until browned.
- Meanwhile, cook sausage and onion in 1 Tbsp hot oil in a skillet over medium-high heat 8 minutes or until browned.
- Stir together water, vinegar, mustard, ½ Tbsp oil, and thyme. Add to skillet with spinach, and toss. Cook 2 minutes or until spinach wilts. Serve sausage mixture over potatoes.
