Potato-Kielbasa Bowls

Ingredients

  • 1 (20-oz) pkg refrigerated diced potatoes
  • ½ (14-oz) pkg kielbasa sausage, sliced
  • ½ onion, thinly sliced
  • 1½ Tbsp olive oil, divided
  • 1½ Tbsp water
  • 1½ Tbsp apple cider vinegar
  • 1 Tbsp Dijon mustard
  • ½ tsp dried thyme
  • 3 cups baby spinach

Instructions

  1. Preheat oven to 450°F. Spread potatoes in a single layer on a rimmed baking sheet. Bake 20 minutes or until browned.
  2. Meanwhile, cook sausage and onion in 1 Tbsp hot oil in a skillet over medium-high heat 8 minutes or until browned.
  3. Stir together water, vinegar, mustard, ½ Tbsp oil, and thyme. Add to skillet with spinach, and toss. Cook 2 minutes or until spinach wilts. Serve sausage mixture over potatoes.
