Avocado Alfredo
Pesto-Tomato TossIngredients
- 6 oz whole-grain rotini pasta
- 1 avocado, coarsely chopped
- 1½ Tbsp lemon juice
- 1 clove garlic
- ½ cup freshly grated Parmesan cheese
Instructions
- Cook pasta in a large saucepan according to package directions; drain, reserving ¼ cup pasta water.
- Process avocado, lemon juice, and garlic in a food processor until smooth.
- Cook avocado mixture, pasta, and pasta water, if needed, in saucepan over medium heat 5 minutes until thoroughly heated. Sprinkle with cheese.
Side Dish Ingredients
- 1 pint grape tomatoes
- 1 Tbsp olive oil
- 2½ Tbsp pesto
Side Dish Instructions
- Cook tomatoes in hot oil in a large skillet over medium-high heat 5 to 8 minutes or until tomatoes begin to soften and burst.
- Transfer to a bowl. Toss with pesto.
