Crispy Italian Fish Bowls
Ingredients
- 4 frozen Parmesan-crusted fish fillets
- ⅓ cup long-grain brown rice
- ½ tsp Italian seasoning
- 3 cups spring mix
- ¾ cup grape tomatoes, halved
- ½ English cucumber, cut into half moons
- ½ cup mozzarella cheese pearls
- 1 (0.5-oz) pkg fresh basil, chopped
- 2 tsp extra virgin olive oil
- 2 tsp balsamic glaze
Instructions
- Bake fish and cook rice according to package directions. Toss rice with Italian seasoning.
- Divide rice, fish, greens, tomatoes, cucumber, cheese, and basil between 2 serving bowls. Serve drizzled with oil and glaze.
