Crispy Italian Fish Bowls

Ingredients

  • 4 frozen Parmesan-crusted fish fillets
  • ⅓ cup long-grain brown rice
  • ½ tsp Italian seasoning
  • 3 cups spring mix
  • ¾ cup grape tomatoes, halved
  • ½ English cucumber, cut into half moons
  • ½ cup mozzarella cheese pearls
  • 1 (0.5-oz) pkg fresh basil, chopped
  • 2 tsp extra virgin olive oil
  • 2 tsp balsamic glaze

Instructions

  1. Bake fish and cook rice according to package directions. Toss rice with Italian seasoning.
  2. Divide rice, fish, greens, tomatoes, cucumber, cheese, and basil between 2 serving bowls. Serve drizzled with oil and glaze.
