Garlic-Cilantro Shrimp Tacos

Ingredients

  • 1 (14-oz) pkg frozen popcorn shrimp
  • ½ cup chopped onion
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp lime juice
  • 6 corn tortillas
  • ½ (10-oz) pkg angel hair coleslaw
  • 1 avocado, sliced

Instructions

  1. Bake shrimp according to package directions.
  2. Meanwhile, cook onion and garlic in hot oil in a large skillet over medium heat 2 minutes. Stir in cilantro and lime juice. Add shrimp; toss.
  3. Heat tortillas according to package directions. Serve shrimp mixture in warm tortillas with coleslaw and avocado.

  • 1 (7-oz) pkg coconut-ginger rice
  • 1 (8-oz) can pineapple tidbits, drained
  • 1 (15-oz) can black beans
