Garlic-Cilantro Shrimp Tacos
Pineapple-Coconut Rice and Black Beans
Ingredients
- 1 (14-oz) pkg frozen popcorn shrimp
- ½ cup chopped onion
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- ¼ cup chopped fresh cilantro
- 2 Tbsp lime juice
- 6 corn tortillas
- ½ (10-oz) pkg angel hair coleslaw
- 1 avocado, sliced
Instructions
- Bake shrimp according to package directions.
- Meanwhile, cook onion and garlic in hot oil in a large skillet over medium heat 2 minutes. Stir in cilantro and lime juice. Add shrimp; toss.
- Heat tortillas according to package directions. Serve shrimp mixture in warm tortillas with coleslaw and avocado.

- 1 (7-oz) pkg coconut-ginger rice
- 1 (8-oz) can pineapple tidbits, drained
- 1 (15-oz) can black beans
Side Dish Instructions
- Cook rice according to package directions. Stir in pineapple.
