Bacon-Swiss Quiche
Fruit and Spinach SaladIngredients
- ½ (15-oz) pkg refrigerated pie crusts
- 8 slices bacon, chopped
- 4 green onions, chopped
- 1 (8-oz) pkg shredded Swiss cheese, divided
- 6 large eggs
- 1 (8-oz) carton heavy cream
- ⅛ tsp grated nutmeg
Instructions
- Preheat oven to 400°F. Unroll pie crust into a 9-inch pie plate. Fold edges under, and crimp as desired. Bake 7 minutes. Reduce oven temperature to 350°F.
- Meanwhile, cook bacon in a skillet over medium heat until crisp; drain on paper towels. Sprinkle bacon, onions, and 1 cup cheese in partially-baked crust.
- Whisk together eggs, cream, and nutmeg in a bowl; season lightly with salt and pepper. Pour over bacon mixture in crust; sprinkle with 1 cup cheese.
- Bake 35 minutes or until center is set; let stand 10 minutes before serving. Cool and store leftovers in refrigerator.

- ½ (10-oz) pkg spinach
- ½ cup blueberries
- 1 cup sliced strawberries
- ¼ cup thinly sliced red onion
- ¼ cup balsamic vinaigrette
