Grilled Cajun Chicken
Okra-Tomato KabobsIngredients
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- 2 Tbsp olive oil
- 3 Tbsp salt-free Cajun seasoning
- 1 tsp garlic powder
- ¼ tsp salt
- ¼ tsp pepper
Instructions
- Rub chicken with oil; sprinkle with Cajun seasoning, garlic powder, salt, and pepper. Chill 1 hour.
- Preheat grill to medium-high heat. Place chicken on grill rack coated with cooking spray. Grill, covered, 5 to 6 minutes per side or until chicken is done.

- 1½ lb okra
- 1 pint organic cherry tomatoes
- 2 Tbsp olive oil
- ½ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Soak bamboo skewers in water 30 minutes.
- Preheat grill to medium-high heat. Toss together okra, tomatoes, oil, salt, and pepper; thread onto skewers.
- Grill, covered, 3 minutes per side or until tender.
