Grilled Cajun Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 2 Tbsp olive oil
  • 3 Tbsp salt-free Cajun seasoning
  • 1 tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Rub chicken with oil; sprinkle with Cajun seasoning, garlic powder, salt, and pepper. Chill 1 hour.
  2. Preheat grill to medium-high heat. Place chicken on grill rack coated with cooking spray. Grill, covered, 5 to 6 minutes per side or until chicken is done.

  • 1½ lb okra
  • 1 pint organic cherry tomatoes
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Soak bamboo skewers in water 30 minutes.
  2. Preheat grill to medium-high heat. Toss together okra, tomatoes, oil, salt, and pepper; thread onto skewers.
  3. Grill, covered, 3 minutes per side or until tender.
