Pork Tenderloin with Balsamic-Orange Sauce

Ingredients
- 1 (1-lb) pork tenderloin, trimmed
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
- 1 onion, sliced
- 2 cloves garlic, minced
- ¼ cup orange juice
- ¼ cup low-sodium chicken broth
- 1 Tbsp balsamic vinegar
- 1 Tbsp cornstarch
- 1 Tbsp water
Instructions
- Sprinkle pork with Italian seasoning, salt, and pepper. Place in a 3- to 4-quart slow cooker; add onion, garlic, orange juice, broth, and vinegar .
- Cover and cook on LOW 8 to 10 hours or until pork is tender; remove pork, reserving mixture in cooker.
- Combine cornstarch and water; add to cooker. Cover and cook on HIGH 15 minutes or until slightly thickened.
- Slice pork, and serve with sauce.
Side Dish Ingredients
- ½ (24-oz) pkg gourmet red potatoes, cut into 1-inch pieces
- ⅓ cup milk
- 1 Tbsp butter
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 (12-oz) pkg green beans
Side Dish Instructions
- Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
- Return to pan; add milk, butter, and ⅛ tsp each salt and pepper. Mash to desired consistency.
- Steam beans according to package directions; sprinkle with ⅛ tsp each salt and pepper.
