Pork Tenderloin with Balsamic-Orange Sauce

Ingredients

  • 1 (1-lb) pork tenderloin, trimmed
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • ¼ cup orange juice
  • ¼ cup low-sodium chicken broth
  • 1 Tbsp balsamic vinegar
  • 1 Tbsp cornstarch
  • 1 Tbsp water

Instructions

  1. Sprinkle pork with Italian seasoning, salt, and pepper. Place in a 3- to 4-quart slow cooker; add onion, garlic, orange juice, broth, and vinegar .
  2. Cover and cook on LOW 8 to 10 hours or until pork is tender; remove pork, reserving mixture in cooker.
  3. Combine cornstarch and water; add to cooker. Cover and cook on HIGH 15 minutes or until slightly thickened.
  4. Slice pork, and serve with sauce.

Side Dish Ingredients

  • ½ (24-oz) pkg gourmet red potatoes, cut into 1-inch pieces
  • ⅓ cup milk
  • 1 Tbsp butter
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 (12-oz) pkg green beans

Side Dish Instructions

  1. Boil potatoes in water to cover in a saucepan 10 minutes or until tender; drain.
  2. Return to pan; add milk, butter, and ⅛ tsp each salt and pepper. Mash to desired consistency.
  3. Steam beans according to package directions; sprinkle with ⅛ tsp each salt and pepper.
