Strawberry-Spinach Salad
Whole-Grain Rolls with Orange Honey ButterIngredients
- 1 cup quick-cooking barley
- 1 (6-oz) pkg organic baby spinach
- 1 (16-oz) pkg organic strawberries, sliced
- 1 cup crumbled feta cheese
- ¼ cup olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp Dijon mustard
- 2 tsp honey
- ½ tsp salt
- ½ tsp pepper
Instructions
- Cook barley according to package directions; transfer to a large bowl. Add spinach, strawberries, and cheese; toss.
- Whisk together oil, vinegar, mustard, honey, salt, and pepper in a small bowl until blended.
- Drizzle dressing over barley salad; toss.

- 6 dinner rolls (preferably whole-grain)
- ¼ cup butter, softened
- 1 Tbsp honey
- ½ tsp orange zest
- ¼ tsp ground cinnamon
