Ingredients

  • 1 cup quick-cooking barley
  • 1 (6-oz) pkg organic baby spinach
  • 1 (16-oz) pkg organic strawberries, sliced
  • 1 cup crumbled feta cheese
  • ¼ cup olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp Dijon mustard
  • 2 tsp honey
  • ½ tsp salt
  • ½ tsp pepper

Instructions

  1. Cook barley according to package directions; transfer to a large bowl. Add spinach, strawberries, and cheese; toss.
  2. Whisk together oil, vinegar, mustard, honey, salt, and pepper in a small bowl until blended.
  3. Drizzle dressing over barley salad; toss.

  • 6 dinner rolls (preferably whole-grain)
  • ¼ cup butter, softened
  • 1 Tbsp honey
  • ½ tsp orange zest
  • ¼ tsp ground cinnamon

Side Dish Instructions

  1. Preheat oven to 400°F. Bake rolls 5 minutes or until toasted.
  2. Combine butter, honey, orange zest, and cinnamon; serve with warm rolls.
