Italian Chicken Thighs
Basil Zucchini "Noodles"
Ingredients
- 1 large onion, chopped
- ½ lb carrots, chopped
- 1 (8-oz) pkg sliced mushrooms
- 3 cloves garlic, minced
- 1¾ cups organic chicken broth
- 1 (8-oz) can tomato sauce
- 3 Tbsp tomato paste
- 2 Tbsp Italian seasoning
- 2 lb bone-in chicken thighs, skinned
Instructions
- Combine onion, carrots, mushrooms, garlic, broth, tomato sauce, tomato paste, and Italian seasoning in a 6-quart slow cooker; stir well.
- Add chicken thighs to cooker. Cover and cook on LOW 6 hours.
- Serve chicken mixture over Basil Zucchini "Noodles" recipe.
Side Dish Ingredients
- 4 zucchini
- 2 Tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 2 to 4 Tbsp chopped fresh basil
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cut zucchini into noodles using a spiralizer. Or cut lengthwise into slices. Stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Combine oil, garlic, basil, salt, and pepper in a large bowl; add zucchini, and toss. Let stand at least 10 minutes before serving.
