Oven-Fried Drumsticks

Sour Cream Coleslaw and Corn with Herb Butter

Ingredients

  • 3 lb chicken drumsticks
  • 2 Tbsp Dijon mustard
  • 1 Tbsp mayonnaise
  • 1 Tbsp water
  • ½ cup almond flour
  • ⅓ cup freshly grated Parmesan cheese
  • 1 tsp garlic salt
  • ¼ tsp cayenne pepper
  • 2 Tbsp butter, melted

Instructions

  1. Preheat oven to 450°F. Pat chicken dry with paper towels.
  2. Combine mustard, mayonnaise, and water. Toss with chicken until coated.
  3. Stir together almond flour, cheese, garlic salt, and cayenne pepper.
  4. Dredge chicken in almond flour mixture, pressing to coat. Place chicken on a large rimmed baking sheet coated with cooking spray.
  5. Bake 35 to 40 minutes or until chicken is done, drizzling with melted butter halfway through baking.

Side Dish Ingredients

  • 2 (16-oz) pkg tricolor coleslaw
  • ½ cup sour cream
  • ¼ cup mayonnaise 
  • 2 Tbsp apple cider vinegar
  • ½ tsp kosher salt
  • 1 (6-count) pkg frozen mini ears corn
  • ¼ cup butter, softened
  • 2 Tbsp chopped fresh dill (or use basil)

Side Dish Instructions

  1. Combine coleslaw, sour cream, mayonnaise, vinegar, and salt in a bowl.
  2. Cook corn in boiling salted water to cover 5 minutes or until tender; drain.
  3. Meanwhile, combine butter and dill. Spread over corn.
