Oven-Fried Drumsticks
Sour Cream Coleslaw and Corn with Herb Butter
Ingredients
- 3 lb chicken drumsticks
- 2 Tbsp Dijon mustard
- 1 Tbsp mayonnaise
- 1 Tbsp water
- ½ cup almond flour
- ⅓ cup freshly grated Parmesan cheese
- 1 tsp garlic salt
- ¼ tsp cayenne pepper
- 2 Tbsp butter, melted
Instructions
- Preheat oven to 450°F. Pat chicken dry with paper towels.
- Combine mustard, mayonnaise, and water. Toss with chicken until coated.
- Stir together almond flour, cheese, garlic salt, and cayenne pepper.
- Dredge chicken in almond flour mixture, pressing to coat. Place chicken on a large rimmed baking sheet coated with cooking spray.
- Bake 35 to 40 minutes or until chicken is done, drizzling with melted butter halfway through baking.
Side Dish Ingredients
- 2 (16-oz) pkg tricolor coleslaw
- ½ cup sour cream
- ¼ cup mayonnaise
- 2 Tbsp apple cider vinegar
- ½ tsp kosher salt
- 1 (6-count) pkg frozen mini ears corn
- ¼ cup butter, softened
- 2 Tbsp chopped fresh dill (or use basil)
Side Dish Instructions
- Combine coleslaw, sour cream, mayonnaise, vinegar, and salt in a bowl.
- Cook corn in boiling salted water to cover 5 minutes or until tender; drain.
- Meanwhile, combine butter and dill. Spread over corn.
