Ingredients

  • 8 slices uncured bacon
  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp honey
  • 2 Tbsp whole-grain Dijon mustard
  • 1 Tbsp organic barbecue sauce
  • 6 hamburger buns (preferably whole wheat)
  • 6 (1-oz) slices fontina cheese
  • 6 green leaf lettuce leaves
  • 2 tomatoes, sliced
  • 2 avocados, sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp; drain, reserving drippings in skillet.
  2. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
  3. Cook chicken, in batches, in hot drippings in a large skillet over medium-high heat 5 to 7 minutes per side or until done; set aside.
  4. Whisk honey, mustard, and barbecue sauce in a small bowl. Spread on buns. Serve chicken on buns with cheese, bacon, lettuce, tomato, and avocado.

Side Dish Ingredients

  • 3 large organic sweet potatoes
  • 3 Tbsp olive oil
  • 3 Tbsp pure maple syrup
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly sliced potatoes.
  2. Toss together potatoes, oil, and maple syrup on two rimmed baking sheets; arrange in single layers on pans. Sprinkle with salt and pepper.
  3. Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool "chips" on wire racks.
