Chicken-Bacon Sandwiches
Maple-Glazed Sweet Potato ChipsIngredients
- 8 slices uncured bacon
- 6 (6-oz) boneless, skinless chicken breasts
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp honey
- 2 Tbsp whole-grain Dijon mustard
- 1 Tbsp organic barbecue sauce
- 6 hamburger buns (preferably whole wheat)
- 6 (1-oz) slices fontina cheese
- 6 green leaf lettuce leaves
- 2 tomatoes, sliced
- 2 avocados, sliced
Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp; drain, reserving drippings in skillet.
- Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet. Sprinkle with salt and pepper.
- Cook chicken, in batches, in hot drippings in a large skillet over medium-high heat 5 to 7 minutes per side or until done; set aside.
- Whisk honey, mustard, and barbecue sauce in a small bowl. Spread on buns. Serve chicken on buns with cheese, bacon, lettuce, tomato, and avocado.
Side Dish Ingredients
- 3 large organic sweet potatoes
- 3 Tbsp olive oil
- 3 Tbsp pure maple syrup
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly sliced potatoes.
- Toss together potatoes, oil, and maple syrup on two rimmed baking sheets; arrange in single layers on pans. Sprinkle with salt and pepper.
- Bake 25 to 35 minutes or until edges are browned and potatoes are crisp. Cool "chips" on wire racks.
