Ingredients
- ½ cup refrigerated yogurt Ranch dressing
- 1 chipotle chile pepper in adobo sauce, chopped
- 1 avocado, chopped
- 1 tsp fresh lime juice
- 1 (9-oz) pkg chopped romaine lettuce
- 1½ cups shredded rotisserie chicken
- 1 (15-oz) can black beans, drained and rinsed
- 1 red bell pepper, thinly sliced
- ½ small red onion, thinly sliced
- ½ cup roasted, salted pepitas (pumpkin seeds)
Instructions
- Stir together dressing and chipotle pepper. Toss together avocado and lime juice.
- Divide lettuce, chicken, beans, avocado, bell pepper, onion, and pepitas among 4 serving bowls; serving drizzled with dressing.
