Ingredients
- 1½ cups shredded rotisserie chicken
- 1 (10-oz) pkg baby arugula
- 3 cups cubed watermelon
- ⅓ cup thinly sliced red onion
- ¼ cup chopped fresh mint
- 1 Tbsp white wine vinegar
- 1 tsp whole-grain Dijon mustard
- 1 tsp honey
- ¼ tsp salt
- ¼ tsp pepper
- ¼ cup extra virgin olive oil
- ¾ cup crumbled feta cheese
- ¼ cup chopped walnuts, toasted
Instructions
- Combine chicken, arugula, watermelon, onion, and mint in a large bowl.
- Whisk together vinegar, mustard, honey, salt, and pepper in a bowl. Gradually add oil, whisking until blended.
- Pour dressing over salad, and toss. Sprinkle with cheese and nuts.
