Sausage-Zucchini Crustless Quiche
Heirloom TomatoesIngredients
- 12 oz ground Italian sausage, casings removed
- 1 zucchini, cut into half-moons
- 1 Tbsp olive oil
- 8 large eggs
- 1 Tbsp Dijon mustard
- ½ tsp garlic powder
- ½ tsp pepper
Instructions
- Preheat oven to 375°F. Cook sausage and zucchini in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly. Remove from heat, and cool 5 minutes.
- Spread sausage mixture in bottom of a greased 9-inch pie plate.
- Whisk together eggs, mustard, garlic salt, and pepper. Pour over sausage mixture in pie plate.
- Place pie plate on a rimmed baking sheet. Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.

- 4 heirloom tomatoes, sliced
- 2 Tbsp extra virgin olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Drizzle tomatoes with oil; sprinkle with salt and pepper.
