Sausage-Zucchini Crustless Quiche

Ingredients

  • 12 oz ground Italian sausage, casings removed
  • 1 zucchini, cut into half-moons
  • 1 Tbsp olive oil
  • 8 large eggs
  • 1 Tbsp Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp pepper

Instructions

  1. Preheat oven to 375°F. Cook sausage and zucchini in hot oil in a large skillet over medium heat 5 to 6 minutes or until sausage is browned and crumbly. Remove from heat, and cool 5 minutes.
  2. Spread sausage mixture in bottom of a greased 9-inch pie plate.
  3. Whisk together eggs, mustard, garlic salt, and pepper. Pour over sausage mixture in pie plate.
  4. Place pie plate on a rimmed baking sheet. Bake 25 minutes or until center is set. Let stand 5 minutes before cutting into wedges.

Side Dish Ingredients

  • 4 heirloom tomatoes, sliced
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Drizzle tomatoes with oil; sprinkle with salt and pepper.
