Smoky Pork Carnitas
Yellow Rice and Guacamole with Chips
Ingredients
- 1 (1-lb) pork tenderloin, trimmed and cubed
- 1 Tbsp olive oil
- ½ (1.25-oz) envelope gluten-free taco seasoning mix
- ¼ cup water
- 6 corn tortillas
- ½ (6-oz) pkg crumbled feta cheese
Instructions
- Cook pork in hot oil in a large nonstick skillet over medium-high heat until browned.
- Add taco seasoning mix and water; cook, stirring occasionally, until pork is done and sauce is thickened.
- Heat tortillas according to package directions. Serve pork in tortillas with cheese.

- 1 (6.9-oz) pkg gluten-free yellow rice (see Note)
- 1 (8-oz) container guacamole
- ½ (13-oz) pkg gluten-free tortilla chips
Side Dish Instructions
- Cook rice according to package directions.
- Serve guacamole with chips.
