Prosciutto-Wrapped Cod
Green Beans Amandine
Ingredients
- 3 (5-oz) cod fillets
- 2 Tbsp olive oil, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 3 thin slices prosciutto
- 1 pint grape tomatoes
Instructions
- Preheat broiler. Brush fish with 1 Tbsp oil; sprinkle with ¼ tsp each salt and pepper. Wrap with prosciutto. Place, seam sides down, on a rack in a broiler-safe pan.
- Broil 8 to 10 minutes or until fish flakes with a fork.
- Meanwhile, sauté tomatoes in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 5 minutes or until beginning to burst.
- Stir in ¼ tsp each salt and pepper. Cook 2 minutes. Serve tomatoes over fish.

- 1 lb green beans, trimmed
- 2 Tbsp low-sodium chicken broth
- 1 small clove garlic, minced
- ¼ cup sliced almonds
- ½ Tbsp olive oil
- ½ Tbsp lemon juice
- ¼ tsp salt
Side Dish Instructions
- Place beans, broth, and garlic in a microwave-safe bowl. Cover tightly with plastic wrap; pierce with a fork. Microwave at HIGH 4 to 6 minutes or until crisp-tender. Drain well.
- Toss together beans, nuts, oil, lemon juice, and salt.
