Shrimp Scampi

Ingredients

  • ⅓ (16-oz) pkg whole-grain angel hair pasta
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • ¾ lb unpeeled, medium-size raw shrimp, peeled and deveined
  • 3 Tbsp white wine (or use chicken broth)
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp butter
  • ⅛ tsp crushed red pepper
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, sauté garlic in hot oil in a large skillet over medium-high heat 1 minute. Add shrimp; cook 2 to 3 minutes or just until shrimp turn pink. Using a slotted spoon, remove shrimp from skillet.
  3. Add wine to skillet; bring to a boil. Stir in lemon juice, butter, and crushed red pepper. Toss mixture with shrimp, pasta, and parsley.

  • ¾ lb broccoli, cut into spears
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine broccoli, oil, salt, and pepper on a greased rimmed baking sheet.
  2. Bake 15 to 20 minutes or until browned and tender, stirring once.
