Shrimp Scampi
Roasted Broccoli
Ingredients
- ⅓ (16-oz) pkg whole-grain angel hair pasta
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- ¾ lb unpeeled, medium-size raw shrimp, peeled and deveined
- 3 Tbsp white wine (or use chicken broth)
- 1 Tbsp fresh lemon juice
- 1 Tbsp butter
- ⅛ tsp crushed red pepper
- 2 Tbsp chopped fresh parsley
Instructions
- Cook pasta according to package directions.
- Meanwhile, sauté garlic in hot oil in a large skillet over medium-high heat 1 minute. Add shrimp; cook 2 to 3 minutes or just until shrimp turn pink. Using a slotted spoon, remove shrimp from skillet.
- Add wine to skillet; bring to a boil. Stir in lemon juice, butter, and crushed red pepper. Toss mixture with shrimp, pasta, and parsley.

- ¾ lb broccoli, cut into spears
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine broccoli, oil, salt, and pepper on a greased rimmed baking sheet.
- Bake 15 to 20 minutes or until browned and tender, stirring once.
