Rosemary-Garlic Chicken Thighs

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 2 Tbsp olive oil, divided
  • 1 Tbsp chopped fresh rosemary
  • 1 tsp garlic powder
  • ½ tsp salt

Instructions

  1. Rub chicken with 1 Tbsp oil; sprinkle with rosemary, garlic powder, and salt.
  2. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 5 to 6 minutes per side or until done.

  • 1½ lb radishes, halved
  • 2 Tbsp olive oil
  • 3 Tbsp minced garlic, divided
  • 2 Tbsp chopped fresh rosemary
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup Israeli (pearl) couscous
  • ½ cup chopped fresh mint
  • ⅓ cup refrigerated lemon vinaigrette

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together radishes, oil, 2 Tbsp garlic, rosemary, salt, and pepper on a large rimmed baking sheet; spread in a single layer. Roast 20 minutes or until golden brown.
  2. Meanwhile, cook couscous according to package directions. Stir in mint, vinaigrette, and 1 Tbsp garlic.
