Pork Tenderloin with Lemon-Garlic Aioli
Cauliflower-Cheese BakeIngredients
- 2 (1-lb) pork tenderloins
- 2 Tbsp olive oil
- 1 tsp kosher salt
- ½ tsp pepper
- ½ cup mayonnaise
- 1 Tbsp lemon juice
- 1 clove garlic, minced
Instructions
- Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle with salt and pepper.
- Grill pork, covered, 20 minutes or until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
- Stir together mayonnaise, lemon juice, and garlic; serve with pork.

- 2 (16-oz) pkg frozen cauliflower florets, thawed
- 1 cup shredded Cheddar cheese
- ½ onion, chopped
- ⅓ cup cottage cheese
- 4 large eggs
- ½ tsp kosher salt
Side Dish Instructions
- Preheat oven to 350°F. Combine all ingredients in a large bowl; mix well.
- Spread cauliflower mixture in an 8-inch baking dish coated with cooking spray.
- Bake 50 to 60 minutes or until set and lightly browned.
