Mac 'n Cheese Tacos

Ingredients

  • ¾ lb ground beef
  • ½ (1-oz) envelope taco seasoning mix
  • 1 bottle mild taco sauce, divided
  • 6 stand 'n stuff taco shells
  • 1 (6-oz) box classic mac 'n cheese
  • ¾ cup shredded Mexican-blend cheese, divided
  • ¼ cup chopped green onions

Instructions

  1. Cook beef in a large skillet over medium-high heat until browned and crumbly; drain and return to skillet. Add seasoning mix, ¼ cup water, and ¼ cup taco sauce. Simmer 2 minutes.
  2. Meanwhile, heat taco shells according to package directions. Prepare mac 'n cheese according to package directions. Stir ⅓ cup cheese into mac 'n cheese in saucepan.
  3. Layer mac 'n cheese and ground beef in taco shells. Top tacos with remaining cheese, onions, and a spoonful of taco sauce.
  4. Serve any extra mac 'n cheese on each plate, if desired.

Side Dish Ingredients

  • 1 (10-oz) pkg vegetable slaw
  • ½ (12-oz) bottle cilantro avocado dressing (or cilantro lime dressing)

Side Dish Instructions

  1. Toss together slaw and desired amount of dressing; chill until ready to serve.
