Ranch Pork Chops and Carrots

Ingredients

  • 1½ lb boneless pork loin chops
  • 6 carrots, chopped
  • 1 large onion, chopped
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (10.5-oz) can cream of chicken soup
  • ¾ cup low-sodium chicken broth

Instructions

  1. Layer pork, carrots, and onion in a 5- to 7-quart slow cooker. Stir together dressing mix, soup, and broth; pour over top.
  2. Cover and cook on LOW 6 to 7 hours or until pork is done.

Side Dish Ingredients

  • 1½ cups uncooked long-grain rice
  • 3 Tbsp butter
  • 3 Tbsp chopped fresh parsley
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook rice according to package directions; stir in butter, parsley, salt, and pepper.
