Mexican Beef Brisket
Spicy Sweet Potato Fries and Green Beans
Ingredients
- 1 onion, thinly sliced
- 3 Tbsp Southwest seasoning
- 3 lb beef brisket, trimmed and halved
- 1 (15-oz) can tomato sauce
- 1 (14.5-oz) can diced tomatoes with green chiles
Instructions
- Place onion in a greased 6- to 7-quart slow cooker. Rub seasoning on all sides of brisket halves; place over onions in slow cooker.
- Stir together tomato sauce and diced tomatoes; spread over brisket.
- Cover and cook on LOW 8 to 9 hours or until beef is very tender (shred 3 cups brisket and reserve for Smoky Brisket Macaroni recipe). Slice remaining brisket, and serve with sauce and onions.

- 1 (20-oz) pkg frozen spicy sweet potato fries with chipotle
- 2 (12-oz) pkg green beans
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Bake fries according to package directions.
- Steam green beans according to package directions; toss with salt and pepper.
