Braised Pork and Red Cabbage

Ingredients

  • 1 large head red cabbage, shredded
  • 2 lb boneless pork loin roast
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup low-sodium chicken broth
  • ¼ cup apple cider vinegar
  • 2 Tbsp brown sugar

Instructions

  1. Place cabbage in a greased 5- to 6-quart slow cooker.
  2. Brush pork with oil; sprinkle with salt and pepper, and place on top of cabbage.
  3. Stir together broth, vinegar, and brown sugar; pour over pork.
  4. Cover and cook on LOW 7 to 8 hours or until pork is tender. Slice pork to serve.

Side Dish Ingredients

  • 2 (5.9-oz) pkg Parmesan couscous
  • 1 (6-oz) pkg baby spinach
  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Cook couscous according to package directions.
  2. Toss together spinach and vinaigrette just before serving.
