Braised Pork and Red Cabbage
Parmesan Couscous and Spinach Salad
Ingredients
- 1 large head red cabbage, shredded
- 2 lb boneless pork loin roast
- 2 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- 1 cup low-sodium chicken broth
- ¼ cup apple cider vinegar
- 2 Tbsp brown sugar
Instructions
- Place cabbage in a greased 5- to 6-quart slow cooker.
- Brush pork with oil; sprinkle with salt and pepper, and place on top of cabbage.
- Stir together broth, vinegar, and brown sugar; pour over pork.
- Cover and cook on LOW 7 to 8 hours or until pork is tender. Slice pork to serve.
Side Dish Ingredients
- 2 (5.9-oz) pkg Parmesan couscous
- 1 (6-oz) pkg baby spinach
- ½ cup balsamic vinaigrette
Side Dish Instructions
- Cook couscous according to package directions.
- Toss together spinach and vinaigrette just before serving.
