Broiled Greek Flounder

Ingredients

  • 3 (6-oz) flounder fillets (or use grouper)
  • 1 cup grape tomatoes
  • ¼ cup pitted halved kalamata olives
  • 1½ Tbsp olive oil
  • 1 tsp Greek seasoning
  • ¼ tsp pepper

Instructions

  1. Preheat broiler. Place fish, tomatoes, and olives in a single layer on a greased baking sheet. Combine oil and Greek seasoning in a small bowl; rub all over fish. Sprinkle with pepper.
  2. Broil 5 minutes per side or until fish flakes with a fork.

Side Dish Ingredients

  • ½ bunch kale, stems removed
  • ¼ cup olive oil
  • 2 Tbsp plain whole-milk Greek yogurt
  • 1½ tsp lemon juice
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • ¼ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Thinly slice kale. Whisk together oil, yogurt, lemon juice, mustard, and garlic in a bowl. Add kale and cheese; toss.
