Parmesan Pork Chops

Ingredients
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1 large egg
- 2 center cut boneless pork chops
- 3 Tbsp olive oil
Instructions
- Combine breadcrumbs, cheese, and seasoning in a shallow bowl. Beat egg lightly in a second shallow bowl. Season pork lightly with salt and pepper. Dip pork chops in beaten egg; dredge in breadcrumb mixture, pressing to adhere.
- Cook pork chops in hot oil in a nonstick skillet over medium heat 3 to 4 minutes per side or until done.

- ½ (32-oz) pkg frozen deli-seasoned potato wedges
- 3 slices bacon, chopped
- ½ bunch kale, chopped
Side Dish Instructions
- Bake potatoes according to package directions.
- Meanwhile, cook bacon in a large nonstick skillet over medium heat until crisp; drain, reserving drippings in skillet.
- Add kale to hot drippings; cook 10 minutes or until tender. Stir in bacon. Season with salt and pepper to taste.
