Ingredients

  • 1½ lb small red potatoes, halved
  • 6 Tbsp olive oil, divided
  • 1 tsp garlic powder
  • ¾ tsp salt, divided
  • ¾ tsp pepper, divided
  • 6 (6-oz) grouper fillets (or any firm white fish)
  • 1 tsp Italian seasoning, divided
  • 2 (12-oz) pkg green beans
  • 2 tsp lemon zest

Instructions

  1. Preheat oven to 450°F. Toss together potatoes, ¼ cup oil, garlic powder, ¼ tsp salt, and ¼ tsp pepper on a large rimmed baking sheet. Bake 8 minutes.
  2. Place fish on one half of another baking sheet; sprinkle with ½ tsp Italian seasoning, ¼ tsp salt, and ¼ tsp pepper. Toss together beans, 2 Tbsp oil, lemon zest, ¼ tsp salt, and ¼ tsp pepper on other half of baking sheet.
  3. Add baking sheet with fish and green beans to oven; bake 12 to 14 minutes or until fish flakes with a fork and green beans and potatoes are lightly browned and tender. Serve with Creamy Lemon-Herb Sauce recipe.

Side Dish Ingredients

  • ½ cup mayonnaise
  • ¼ cup chopped fresh parsley
  • 2 Tbsp lemon juice
  • 1 Tbsp minced garlic
  • ½ tsp salt

Side Dish Instructions

  1. Combine all ingredients in a small bowl, adding water, if needed, to reach pourable consistency. Serve with fish, potatoes, and green beans.
