Barbecue Beef and Bean Bowls
Ingredients
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1½ lb ground sirloin
- 1 onion, chopped
- 2 (15-oz) cans black beans, drained and rinsed (or use pinto beans)
- 1½ cups barbecue sauce
- 1½ cups shredded Mexican-blend cheese
- 3 Roma tomatoes, chopped
- 3 green onions, sliced
Instructions
- Cook rice according to package directions.
- Meanwhile, cook beef and onion in a large skillet coated with cooking spray over medium-high heat 8 minutes or until beef is browned and crumbly. Stir in beans and barbecue sauce; cook 3 minutes or until thoroughly heated.
- Divide rice among 6 bowls. Top with beef mixture, cheese, tomatoes, and green onions.
