Barbecue Beef and Bean Bowls

Ingredients

  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1½ lb ground sirloin
  • 1 onion, chopped
  • 2 (15-oz) cans black beans, drained and rinsed (or use pinto beans)
  • 1½ cups barbecue sauce
  • 1½ cups shredded Mexican-blend cheese
  • 3 Roma tomatoes, chopped
  • 3 green onions, sliced

Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, cook beef and onion in a large skillet coated with cooking spray over medium-high heat 8 minutes or until beef is browned and crumbly. Stir in beans and barbecue sauce; cook 3 minutes or until thoroughly heated.
  3. Divide rice among 6 bowls. Top with beef mixture, cheese, tomatoes, and green onions.
