Sheet Pan Herbed Flank Steak
Kale and Sweet Potato Skillet
Ingredients
- 1½ lb flank steak, trimmed
- 3 Tbsp olive oil
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp chopped fresh thyme
- 1 tsp crushed red pepper
- ¾ tsp salt
- 2 cloves garlic, minced
Instructions
- Preheat broiler. Place steak on a foil-lined rimmed baking sheet.
- Combine oil, rosemary, thyme, red pepper, salt, and garlic in a bowl; brush oil mixture on steak.
- Broil 4 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.

- 1 (16-oz) pkg diced sweet potatoes
- 1 red onion, chopped
- 3 cloves garlic, minced
- ½ tsp salt
- 3 Tbsp olive oil
- 4 cups chopped kale (or use baby spinach)
- 6 Tbsp chopped pecans
- 1 Tbsp chopped fresh rosemary
Side Dish Instructions
- Cook potatoes, onion, garlic, and salt in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until browned.
- Add kale, nuts, and rosemary; cook until kale wilts.
