Sheet Pan Herbed Flank Steak

Kale and Sweet Potato Skillet

Ingredients

  • 1½ lb flank steak, trimmed
  • 3 Tbsp olive oil
  • 1 Tbsp chopped fresh rosemary
  • 1 Tbsp chopped fresh thyme
  • 1 tsp crushed red pepper
  • ¾ tsp salt
  • 2 cloves garlic, minced

Instructions

  1. Preheat broiler. Place steak on a foil-lined rimmed baking sheet.
  2. Combine oil, rosemary, thyme, red pepper, salt, and garlic in a bowl; brush oil mixture on steak.
  3. Broil 4 to 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.

  • 1 (16-oz) pkg diced sweet potatoes
  • 1 red onion, chopped
  • 3 cloves garlic, minced
  • ½ tsp salt
  • 3 Tbsp olive oil
  • 4 cups chopped kale (or use baby spinach)
  • 6 Tbsp chopped pecans
  • 1 Tbsp chopped fresh rosemary

Side Dish Instructions

  1. Cook potatoes, onion, garlic, and salt in hot oil in a large skillet over medium-high heat 8 to 10 minutes or until browned.
  2. Add kale, nuts, and rosemary; cook until kale wilts.
