Buffalo Chicken Salad Sandwiches

Ingredients

  • ¼ cup reduced-fat mayonnaise
  • ¼ cup fat-free plain Greek yogurt
  • ¼ cup crumbled blue cheese
  • 2 Tbsp Buffalo sauce
  • 1½ cups shredded rotisserie chicken
  • 2 stalks celery, chopped
  • 4 green leaf lettuce leaves (optional)
  • 8 (1-oz) slices whole wheat sandwich bread, toasted

Instructions

  1. Combine mayonnaise, yogurt, cheese, and Buffalo sauce. Add chicken and celery; toss.
  2. Place 1 lettuce leaf (if using) on 1 slice of bread; top with chicken salad, and cover with remaining bread.

  • 6 cups shredded romaine lettuce
  • 1 English cucumber, chopped
  • 1 carrot, shredded
  • ¼ cup olive oil vinaigrette

  1. Toss together all ingredients in a large bowl.
