Buffalo Chicken Salad Sandwiches
Chopped Romaine SaladIngredients
- ¼ cup reduced-fat mayonnaise
- ¼ cup fat-free plain Greek yogurt
- ¼ cup crumbled blue cheese
- 2 Tbsp Buffalo sauce
- 1½ cups shredded rotisserie chicken
- 2 stalks celery, chopped
- 4 green leaf lettuce leaves (optional)
- 8 (1-oz) slices whole wheat sandwich bread, toasted
Instructions
- Combine mayonnaise, yogurt, cheese, and Buffalo sauce. Add chicken and celery; toss.
- Place 1 lettuce leaf (if using) on 1 slice of bread; top with chicken salad, and cover with remaining bread.

- 6 cups shredded romaine lettuce
- 1 English cucumber, chopped
- 1 carrot, shredded
- ¼ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
