Pork Tenderloin with Lemon-Garlic Aioli
Cauliflower-Cheese Bake
Ingredients
- 1 (1-lb) pork tenderloin
- 1 Tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp pepper
- ¼ cup mayonnaise
- ½ Tbsp lemon juice
- 1 small clove garlic, minced
Instructions
- Preheat grill or grill pan to medium-high heat. Rub pork with oil; sprinkle with salt and pepper.
- Grill pork, covered, 20 minutes or until a meat thermometer inserted reads 145°F, turning occasionally. Let stand 5 minutes before slicing.
- Stir together mayonnaise, lemon juice, and garlic; serve with pork.

- 1 (16-oz) pkg frozen cauliflower florets, thawed
- ½ cup shredded Cheddar cheese
- ¼ cup chopped onion
- 3 Tbsp cottage cheese
- 2 large eggs
- ¼ tsp kosher salt
Side Dish Instructions
- Preheat oven to 350°F. Combine all ingredients in a large bowl; mix well.
- Spread cauliflower mixture in a small baking dish coated with cooking spray.
- Bake 40 to 45 minutes or until set and lightly browned.
