Ingredients

  • 1 lb flank steak
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 cup cauliflower florets
  • ¾ cup low-sodium chicken broth
  • ½ cup coconut milk
  • 1 Tbsp lime juice
  • ½ tsp garlic powder
  • ¼ cup chopped fresh cilantro
  • ¼ cup roasted, salted almonds, chopped

Instructions

  1. Preheat grill or grill pan coated with cooking spray to medium-high heat. Sprinkle steak with salt and pepper.
  2. Grill, covered, 5 to 10 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
  3. Meanwhile, cook cauliflower according to package directions; transfer to a blender. Add broth, coconut milk, lime juice, garlic powder, and desired amounts of salt and pepper; process until smooth, scraping sides as needed.
  4. Sprinkle steak with cilantro and nuts; serve with cauliflower sauce.

  • ½ Tbsp butter
  • ½ Tbsp balsamic vinegar
  • ¼ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook beans in hot oil in a large skillet over medium-high heat 2 minutes.
  2. Add butter, and cook 3 minutes or until butter browns and smells nutty, stirring often. Remove from heat. Stir in vinegar, salt, and pepper.
