Flank Steak with Creamy Cauliflower Sauce

Ingredients
- 1 lb flank steak
- ½ tsp salt
- ¼ tsp pepper
- 1 cup cauliflower florets
- ¾ cup low-sodium chicken broth
- ½ cup coconut milk
- 1 Tbsp lime juice
- ½ tsp garlic powder
- ¼ cup chopped fresh cilantro
- ¼ cup roasted, salted almonds, chopped
Instructions
- Preheat grill or grill pan coated with cooking spray to medium-high heat. Sprinkle steak with salt and pepper.
- Grill, covered, 5 to 10 minutes per side or to desired doneness. Let stand 10 minutes before thinly slicing across the grain.
- Meanwhile, cook cauliflower according to package directions; transfer to a blender. Add broth, coconut milk, lime juice, garlic powder, and desired amounts of salt and pepper; process until smooth, scraping sides as needed.
- Sprinkle steak with cilantro and nuts; serve with cauliflower sauce.

Side Dish Instructions
- Cook beans in hot oil in a large skillet over medium-high heat 2 minutes.
- Add butter, and cook 3 minutes or until butter browns and smells nutty, stirring often. Remove from heat. Stir in vinegar, salt, and pepper.
