Favorite Ballpark Nachos
Ingredients
- 1 lb plant-based ground beef
- ½ onion, chopped
- 1 Tbsp olive oil
- 1 (12-oz) pkg tortilla chips
- 1 (15.4-oz) can vegetarian refried black beans
- 1 (15-oz) can nacho cheese sauce
- ½ head iceberg lettuce, shredded
- 2 tomatoes, chopped
- 1 (8-oz) carton sour cream
- ¼ cup sliced pickled jalapeño peppers (optional)
Instructions
- Preheat oven to 400°F. Cook plant-based beef and onion in hot oil in a large skillet over medium heat until browned and crumbly.
- Arrange chips on a parchment paper-lined large rimmed baking sheet.
- Heat beans according to package directions; dollop beans over chips. Sprinkle with plant-based beef mixture. Bake 10 minutes or until thoroughly heated.
- Heat cheese sauce according to directions on can; pour over nachos. Top with lettuce, tomatoes, sour cream, and, if desired, jalapeños.
