Favorite Ballpark Nachos

Ingredients

  • 1 lb plant-based ground beef
  • ½ onion, chopped
  • 1 Tbsp olive oil
  • 1 (12-oz) pkg tortilla chips
  • 1 (15.4-oz) can vegetarian refried black beans
  • 1 (15-oz) can nacho cheese sauce
  • ½ head iceberg lettuce, shredded
  • 2 tomatoes, chopped
  • 1 (8-oz) carton sour cream
  • ¼ cup sliced pickled jalapeño peppers (optional)

Instructions

  1. Preheat oven to 400°F. Cook plant-based beef and onion in hot oil in a large skillet over medium heat until browned and crumbly.
  2. Arrange chips on a parchment paper-lined large rimmed baking sheet.
  3. Heat beans according to package directions; dollop beans over chips. Sprinkle with plant-based beef mixture. Bake 10 minutes or until thoroughly heated.
  4. Heat cheese sauce according to directions on can; pour over nachos. Top with lettuce, tomatoes, sour cream, and, if desired, jalapeños.
