Sun-Dried Tomato Pizza Flatbread Sandwiches

Ingredients

  • 2 pieces naan (preferably whole wheat), halved
  • ½ cup fire-roasted marinara sauce
  • ½ (3-oz) pouch sun-dried tomatoes
  • ⅔ cup shredded Italian-blend cheese
  • ¼ tsp Italian seasoning
  • 2 Tbsp chopped fresh basil
  • ½ Tbsp olive oil

Instructions

  1. Preheat oven to 350°F. Place 2 flatbread halves on a baking sheet. Top with marinara sauce, tomatoes, cheese, seasoning, basil, and remaining 2 flatbread halves. Brush tops of sandwiches with oil.
  2. Bake 6 to 8 minutes or until bread is toasted and cheese is melted.

Side Dish Ingredients

  • ½ (10-oz) chopped romaine lettuce
  • ½ pint grape tomatoes
  • ½ English cucumber, sliced
  • ¼ cup crumbled feta cheese
  • 3 Tbsp vegan balsamic vinaigrette

  1. Toss together all ingredients in a bowl.
