Sun-Dried Tomato Pizza Flatbread Sandwiches

Ingredients
- 2 pieces naan (preferably whole wheat), halved
- ½ cup fire-roasted marinara sauce
- ½ (3-oz) pouch sun-dried tomatoes
- ⅔ cup shredded Italian-blend cheese
- ¼ tsp Italian seasoning
- 2 Tbsp chopped fresh basil
- ½ Tbsp olive oil
Instructions
- Preheat oven to 350°F. Place 2 flatbread halves on a baking sheet. Top with marinara sauce, tomatoes, cheese, seasoning, basil, and remaining 2 flatbread halves. Brush tops of sandwiches with oil.
- Bake 6 to 8 minutes or until bread is toasted and cheese is melted.
Side Dish Ingredients
- ½ (10-oz) chopped romaine lettuce
- ½ pint grape tomatoes
- ½ English cucumber, sliced
- ¼ cup crumbled feta cheese
- 3 Tbsp vegan balsamic vinaigrette

- Toss together all ingredients in a bowl.
